ONE POT ZESTY PESTO GNOCCHI

This delicious one pot Spinach Gnocchi was made featuring The Saucerer x Eleanor Wilkinson's new Chimichurri Pesto. It's as quick and easy as it is delicious.

INGREDIENTS
Sunny & Luna Spinach Gnocchi
Saucerer Chimichurri Pesto
A few leaves of Cavolo Nero (you could also use another nutritional leafy green like Swiss Chard)
Around 50g frozen peas
A lemon for squeezing
A bit of Parmesan if you like
PREPARATION
First put the gnocchi on to fry in a non stick frying pan over a medium heat with some olive oil for 6 mins, shaking occasionally until golden brown.
Meanwhile pull off the leaves from the cavolo nero, finely chop the stems and roughly slice the leaves.
Once the gnocchi is done, set aside and in the same pan, sauté the stems for one minute in some great quality EVOO before adding the leaves and a splash of water and placing back on the heat with the lid on.
Once the greens have started to soften (3-4 mins) take the lid off and allow most of the water to evaporate. Add in the peas until they are just cooked.
Add in the pesto (you can loosen it with some water shaken up inside the jar) and add the gnocchi back in.
Stir to heat the gnocchi through and add a squeeze of lemon and some Parmesan.
That’s it! Eat it straight from the pan or dress it up with whatever herbs you have lying around.
