GNOCCHI ALLA SORRENTINA

Trying to fight those post-christmas, dreary January blues?
This hearty, one-pot dish is definitely a recipe to save for when you need a warm and comforting dinner, and with Sunny & Luna Gnocchi, you can squeeze an extra portion of veggies in.
Rich and creamy, these classic Italian flavours are perfect to beat those post-Christmas blues.

INGREDIENTS
You’ll need:
Sunny & Luna Spinach Gnocchi
A tin of peeled tomatoes
Around 15 cherry tomatoes
2 large garlic cloves
1 handful of fresh basil
2 balls of mozzarella
Extra virgin olive oil
INSTRUCTIONS
Pre-heat your oven to 220°C.
Heat 2 tablespoon of oil in a large pan and add the cherry tomatoes with a sprinkling of salt.
Meanwhile break up the mozzarella and thinly slice the garlic. Once the tomatoes are slightly charred, add the garlic and sauté for 1-2 minutes.
Add the tinned tomatoes and simmer for around 10 minutes, or until they have completely softened.
Season and add chopped basil, along with half of the torn up mozzarella and the spinach gnocchi.
Ensure everything is combined and the gnocchi is submerged within the sauce. Place the rest of the mozzarella on top, then bake in the oven for around 20 minutes, or until the cheese is melted, bubbling and golden.
