The Gnocchi con Tomate puts a fun pasta twist on the traditional Spanish dish ‘Pan con Tomate’. This is the perfect recipe for this time of year, as tomatoes are in season and the flavours of this dish are super light and fresh, which is just what you want in the summer.
The Tagliatelle with Kale Sauce is incredibly cheesy, satisfying, and packed full of nutrients thanks to all the beautiful greens and our super high protein tagliatelle! Nothing tastes better than a filling meal that's good for both your body and soul!

Gnocchi con Tomate
1 pack of Sunny & Luna Cauliflower Gnocchi
4 large tomatoes
2 tbsp olive oil
Generous pinch salt
1 garlic clove
Chives, finely chopped
Put the tomatoes, 1 tbsp oil, and salt in a blender and pulse 3 or 4 times until the tomato is broken up but still has texture. Alternatively, grate the tomatoes into a bowl and mix in the oil and salt.
Depending on the juiciness of the tomatoes, you may need to pass the mix briefly through a sieve to get rid of some of the excess liquid.
Heat the remaining oil in a frying pan over medium heat along with the whole garlic clove. Add the gnocchi and cook for 3-5 minutes until golden and crispy.
Serve the gnocchi on two plates and top with the tomato mix and chopped chives.
Tagliatelle with Kale Sauce
1 pack of Sunny & Luna Cauliflower Tagliatelle
100g kale, stems removed
50g grated parmesan, plus extra for the top
Juice of ½ lemon
Salt and pepper
Bring a pan of salted water to the boil and blanch the kale for 2 minutes.
Remove the kale, add the tagliatelle to the leftover water and cook for 3 minutes until al dente (4 minutes if you prefer your pasta more well done.)
Reserve 1 cup of the pasta water then drain the rest and serve into two bowls.
Quickly blend the kale, parmesan, lemon, 1 tbsp oil, a generous pinch of salt and a splash of the pasta water. Taste to adjust the seasoning and add more water until the sauce is a pourable consistency.
Top the tagliatelle with the sauce and serve with an extra sprinkling of parmesan.
