Spiced Pear Gnocchi with Blue Cheese

Sunny and Luna spiced pear gnocchi with blue cheese vegan plant based

This bundle for two makes for a perfect starter, main and dessert to be shared with a loved one.


Serves 2

You’ll need:

1 large pear

1 tsp cinnamon

A few sprigs of fresh flat-leaf parsley

2 tbsp of vegan butter

50-75g Honestly Tasty's blue cheese

x1 pack Sunny&Luna cauliflower gnocchi – room temp. Take the pack out of the fridge a few hours before cooking!


To make the spiced pears:

Slice and dice the pear into 1cm cubes. Melt a tbsp of butter in a non-stick pan and add the pears and cinnamon. Toss frequently and cook for 8-10 minutes, they should soften but not turn mushy. Once ready, leave to the side.

To make the gnocchi:

Melt another tbsp or so of butter into the used pan (to soak up the fruity flavours!). Add the gnocchi and stir to coat in butter. Add a little extra, or a splash of water to stop things from sticking. Fry until the pieces are turning golden, then add the chunks of pear and stir together.

Remove from the heat. Roughly chop up the blue cheese into similar sized chunks to the pear, and toss them through the dish before serving.
