SUNDRIED TOMATO PESTO GNOCCHI WITH BURRATA

Crispy gnocchi, rich sun-dried tomato pesto and creamy burrata come together in this simple but deeply satisfying dish.


Golden Sunny & Luna Gnocchi are tossed in a homemade pesto packed with sun-dried tomatoes, parmesan, pine nuts, garlic and fresh basil. Creamy burrata and slices of juicy vine tomato bring everything together.


Rich, creamy and full of flavour, this easy sun-dried tomato gnocchi recipe serves two and takes just 10 minutes.

INGREDIENTS

You’ll need -

1 pack Sunny & Luna Gnocchi – any flavour will work, but we used Pumpkin Gnocchi

1 tbsp olive oil

1 burrata

1 vine tomato


For the sun-dried tomato pesto -

80g sun-dried tomatoes in oil

30g pine nuts

40g parmesan, grated

A handful of fresh basil leaves

2 garlic cloves

85g extra virgin olive oil

1 tbsp tomato purée

¼ tsp salt

¼ tsp black pepper


INSTRUCTIONS

Add the gnocchi to a non-stick frying pan with 1 tablespoon of olive oil. Fry for around 6 minutes, until golden and crispy.


Add the sun-dried tomatoes, pine nuts, parmesan, basil, garlic, tomato purée, salt and black pepper to a food processor. With the food processor running, gradually pour in the extra virgin olive oil and blend until smooth.


Add a couple of tablespoons of the pesto to the gnocchi, along with a splash of water. Stir everything together until the pesto loosens into a creamy sauce and coats the gnocchi.


Serve with the burrata and sliced vine tomato. Finish with a drizzle of olive oil, a few extra pine nuts and some freshly cracked black pepper.
