COURGETTE & MISO GNOCCHI

Lonely courgette in your fridge? This is the perfect recipe if you want a quick and easy healthy meal, bursting with incredible flavour.
All you need are some kitchen essentials and our delicious spinach gnocchi to turn this courgette into a life saver dinner.

Another great way to eat our Sunny & Luna spinach gnocchi with authentic Mediterranean flavours and an umami kick.
INGREDIENTS
Serves 2
1 large courgette
Extra Virgin Olive Oil
1 large garlic clove
1 heaped teaspoon of miso paste
Half a lemon
A few sprigs of thyme if you’ve got them
Sunny & Luna Spinach Gnocchi
Parmesan for grating
INSTRUCTIONS
(Carefully) use a mandolin to thinly slice your courgette and cook in a pan with some olive oil and salt over a medium heat until the slices start to soften.
Add a thinly sliced garlic clove, miso paste and a splash of water and return to the heat, stirring to ensure that the miso is completely incorporated throughout.
Continue to cook down until the courgette caramelises, and then lighten up with a squeeze of lemon.
Meanwhile, pan or air fry some Sunny & Luna Spinach Gnocchi in a little oil for 5 minutes until slightly crispy. Add the gnocchi to the courgette and miso mixture, season and grate in some Parmesan to emulsify into a sauce.
